Ingredients
500 gr Perline® eggplants
350 gr Old fashion peel by hand tomatoes
1 onion
2 garlic cloves
extra virgin olive oil as needed
salt
red chilli pepper
TOMATO PERLINE
Serves 4
Preparation
Get rid of Perline® stalks, then slice them lenghtwise without peeling.
Heat the oil in a pan with the onion and garlic.
Add the Perline® eggplants and cook until golden, then add the tomatoes; add the basil at half cooking (about 7-10 min) and season with chilli pepper.
Cook for 10 minutes and serve warm.
