500 gr Perline® eggplant
stone-ground flour, as needed for breading
frying oil
salt
balsamic vinegar
Oregano

Preparation


Cut Perline® eggplants into sticks without peeling, dip in stone-ground flour and put them in a pan with hot frying oil. Let them golden on each side, place them on a serving dish and sprinkle with salt, oregano and balsamic vinegar. Serve cold as an appetizer or side dish.
