Ingredients
400 gr Perline® eggplants
1/2 onion
1 garlic clove
a sprig of parsley
red chilli pepper
salt
400 gr spaghetti pasta
Grated parmesan cheese
SPAGHETTI WITH PERLINE & PARSLEY
Serves 4
Preparation
Slice the onion and stirfry with the garlic; add the Perline® eggplants cut into cubes and let cook for 15 minutes. Season with salt, red chilli pepper and parsley. Cook spaghetti al dente; mix it to the sauce and sautee for a few minutes. Sprinkle with grated parmesan and serve.
